Enjoy an exclusive umami-packed dinner at Appetite, a creative multidisciplinary space that brings together luxurious food, music, art, research, and thought to create a new kind of community across boundaries. Led by Chef Ivan Brehm, Appetite serves a sumptuous multi-course omakase menu that draws on a deep study of global food traditions and a love of improvisation.
Appetite’s kitchen is a centre for culinary research as well as an intimate and experimental dining space. Featuring an extensive selection of snacks, tapas, and small plates, the menu is designed to evolve weekly, drawing inspiration from our global perspective, partner farms, and Chef Ivan Brehm’s culinary explorations. They host daily events across a wide range of formats like public talks, masterclasses, book launches, networking sessions, and Tiny Desk concerts.
Furthermore, they have a living room with an art lounge and a listening room where guests can relax and enjoy music from one of Singapore’s largest private vinyl collections. This extensive archive of more than 3,000 records spans time and geography, from Afro-Cuban jazz to 70s rock, 90s R&B, and more.
Appetite’s art programme, helmed by Siuli Tan, brings the experience of an art gallery to a more informal and relational space. Every three months, the team curates new exhibitions that feature established and emerging artists alike, many of whose works have never been shown in Singapore before.
Biography:
Ivan Brehm, best known for leading The Kitchen at Bacchanalia in Singapore to its first-ever Michelin Star in 2016 as its Executive Chef, is the chef-owner of one Michelin-starred restaurant Nouri (established in 2017) and the creative interdisciplinary space, Appetite (established in 2020).
Ivan is very inspired and captivated by the intersections of so many different cultures in the culinary scene in Singapore. He is recognised for developing a system of thought – of which cooking is a part – called Crossroads Thinking. They document, archive, and reinterpret patterns of migration, trade, war, and exchange across time and geography. Their multi-disciplinary team and advisory board include chefs, anthropologists, historians, journalists, artists, and designers. This research arm was opened in 2018, 12 months after Restaurant Nouri.
Nouri was created from the conviction that no food culture exists in isolation. By cooking food rooted in research, the restaurant creates dishes that are universally delicious, exploring our shared history and a future of respect and diversity. Beyond concepts, philosophies, or types of cuisines, Nouri is a place that celebrates people in all our differences and similarities.
A floor above sits Appetite (opened in 2020), a creative space that brings together an R&D kitchen, art gallery, and record bar to create a new kind of community across boundaries. Sitting at the crossroads of gastronomy, visual arts, and music, Appetite’s mandate is to explore an intimate appreciation of these creative forms of expression and promote trans-disciplinarity with thorough research, food, and meaningful experiences.
